There are a lot of ways to make hard-boiled eggs, but this 8-8-8 method has been the easiest for me to reproduce.
The basic idea is:
- 8 minutes in boiling water
- 8 minutes resting in the hot water off heat
- 8 minutes in an ice bath
So far, this has given me reliably cooked eggs without needing to overthink it.
Ingredients
- Eggs
- Water
- Ice
Setup
Fill a pot with enough water to cover the eggs.
Put the pot on the stove and turn the heat all the way up. On my electric stove, that means setting it to max.
Wait until the water reaches a strong rolling boil.
Boil
Once the water is at a rolling boil, gently lower the eggs into the pot.
Be careful here so the eggs do not crack when they hit the bottom.
Let the eggs boil for 8 minutes.
Rest in the hot water
After the 8 minutes are up, take the pot off the heat.
Leave the eggs in the hot water for another 8 minutes.
This lets them finish cooking more gently without continuing to aggressively boil.
Ice bath
While the eggs are resting in the hot water, prepare an ice bath.
After the second 8 minutes are up, gently move the eggs into the ice bath.
Let them sit in the ice bath for 8 minutes.
The ice bath helps cool the eggs down quickly and makes them easier to handle when peeling.
Peel and eat
Once the final 8 minutes are up, peel the eggs and enjoy.
To make peeling easier, lightly smack the egg from top to bottom, then crack it all around. This helps loosen the shell and makes it easier to get underneath the membrane.
As you peel, use the ice bath water to rinse off any tiny shell pieces. This helps clean the egg as you go and makes sure you are not left with little crunchy bits of shell.
From there, the shell should peel off pretty easily.
What to remember
The whole method is just:
8 minutes boiling, 8 minutes resting, 8 minutes cooling.
That makes it easy to repeat without needing to constantly check the eggs.
